I try to limit the number of admin accounts on a site, and that doesn't go by itself. Some impression of the various accounts and what they can and can't do:

Roles

There are a lot of different roles, and with certain plugins, you can create and fine tune additional roles.

I try to use only a couple of roles. Hierarchy, from most to least powerful:

Admin » Shop manager » Editor

An admin account can do everything: There is access to all things technical, as well as to all data.
