SkyVerge is the creator of a plugin to generate PDF documents in WooCommerce. We sometimes use it alongside WP Overnight.

Template

The template page (see above) opens a WYSIWYG interface for designing various aspects of a generic order form. I don't know where furter details can be customised. Maybe through code?
